When the real game comes out will there be different servers. And if so will there be a difference between them

Also if so will you have to chose the server again and gain or will it always be asigned to your character

The servers are linked all over the world.

What you will be chosing is your region.
IE: america, europe, korea

When you go to a town you will be sent to the best server available for you.

The servers are seemless.

However, you pick America, Europe, or Korea when you start your account. This can be changed only 5 times.

To play with someone from a different region, you must both go to the international district.

Unlike most MMORPG's, GW is all one world- it's not divided up into servers or shards. They have different regions(America, Europe, Korea) where people from different regions are divided(mostly to help find people who speak languages you can understand), but if you want to play with anyone in the world who's playing GW, you can meet up in-game. If they're in a different world(say Europe vs. America), you'll have to move into the international districts to meet up, but everyone is playing in the same world/server/shard.
